This simple method for cooking beef tips is one of my favorite ways to use stew meat. When done right, this recipe gives you deliciously tender meat drowned in a flavorful sauce which you can then serve over pasta, rice, or mashed potatoes.
I adapted and tweaked this recipe from one that my mom would make for us often growing up. As a cattle farming family, we enjoyed plenty of access to homegrown beef. I will tell you: it is drastically different from what you buy at the store! Once you enjoy a burger, or a large juicy steak right from the farm, you will not want to go back to store bought beef! Mom made this regularly partly because of our access to high quality beef and also because of the simplicity of this recipe.

The process
To make this dish, you simply brown the meat on all sides on the stove top with a medium onion. You can optionally sautee a chopped pepper and some mushrooms with the meat, as well. While the meat is browning with these veggies, combine all the other ingredients in a large bowl.
You then place the meat in a large baking dish, pour the liquid mix, over the top, and bake it in the oven. It is such a simple process, you only need to do it once to have it memorized and feel comfortable repeating it. Go ahead–give it a try!

The ingredients
The meat: You will often hear the terms steak tips, beef tips, and sirloin tips used interchangeably. You might also hear the term stew meat used to describe similar cuts of meat. Each of these cuts are somewhat different from each other, but they can be used interchangeably in this recipe. You will just likely notice that stew meat will lend you a tougher and chewier end result than the tips will.
The onion, pepper, and mushrooms: Each of these is technically optional. In fact, in the original recipe my mom wrote, she did not include them. However, both of us have adapted this recipe over time to include one or all of these additions at various times. You will not miss them if they are not included, but they are wonderful additions.
What makes up the sauce: Melted butter, olive oil, lemon juice, ketchup, salt, worcestershire sauce, and pepper constitute the liquid ingredients which form the flavorful sauce.
If you don’t have all of these ingredients, or you want to swap them out for healthier or different options, here are some swaps you can make. These changes will simply offer you a slightly different flavor in the sauce.
- Melted butter for melted coconut oil.
- Olive oil for avocado oil.
- lemon juice for apple cider vinegar.
- Ketchup for tomato sauce.

Ingredients
2 tablespoons of olive oil
1/2 of a medium onion
1/2 of a green pepper (optional)
1/2 of a cup of chopped mushrooms (optional)
1.5-2 pounds of beef tips
4 tablespoons of melted butter
2 tablespoon of lemon juice
1.5 cups of ketchup
1/2 teaspoon of salt
4 tablespoons of Worcestershire sauce
1/2 teaspoon of black pepper
Directions
- Preheat the oven to 350 degrees.
- Brown the meat in a large sauce pan with the oil, onion, peppers, and mushrooms if you are including all of the above. Ensure the meat is browned on all sides, and you are not seeing raw meat on the outside of the steak tips. This should take about 10 minutes on medium heat.
- While the meat is browning on the stove top with the vegetables, combine and mix the remaining ingredients in a large bowl. (The butter, lemon juice, ketchup, salt, pepper, and worcestershire sauce)
- Once the beef tips are done cooking, transfer them to a baking dish, and pour the liquid mixture over the top. Bake in the 350 degree oven for 45-60 minutes.
- (Optionally): While the beef tips are baking, you can cook pasta, rice, or mashed potatoes on the stove top to serve with them.
Notes
- Don’t have time to make it and bake it all at once? You can also prep this ahead, and refrigerate the baking dish for a day or two until you are ready to bake.
