Catalina chicken: Your family’s new favorite

What’s needed for chicken catalina?

To pull this main dish together, all you need is some:

  • Catalina dressing
  • Cranberry sauce
  • Boneless skinless chicken breasts or thighs.

You can use any kind of store bought catalina dressing, or you can take control of the ingredients and make your own here in just two steps: dump + blend.

Similarly, you can use canned cranberry sauce, or you can make your own quick cranberry sauce by following these directions.

The process

As I said, this is a dump and go recipe so the process is super simple!

Place your boneless skinless chicken thighs or breasts in a baking dish, or in the crock pot.

Pour the catalina sauce and the cranberry sauce over the chicken. Use a spatula to spread it so the meat is evenly covered.

Bake it at 375 degrees for about 45-55 minutes. Alternatively, you can leave it in the crock pot on low for about 5-7 hours.

Serve this meal over mashed potatoes, rice, pasta, or by itself, and enjoy it along with your choice of sides!

Ingredients

  • 8-10 boneless and skinless chicken breasts or thighs (average size)

  • 2 cups of catalina dressing

  • 2 cups (or one can) of cranberry sauce

Directions

  • Oven baked directions
  • Preheat the oven to 375 degrees, and place the chicken in a baking dish.
  • Pour the catalina dressing and the cranberry sauce over the top of the chicken. Use a spatula to stir and spread it to ensure the sauces are combined well, and are fully covering the chicken.
  • Bake the chicken for 45-55 minutes, and allow it to cool slightly before serving over your choice of rice, potatoes, or pasta.
  • Alternative crock pot directions
  • Place the chicken in the crock pot, and pour the sauces over the top. Use a spatula to fully combine and cover the chicken with the sauce.
  • Cook on low for 5-7 hours until the chicken is fully cooked through, and again enjoy served over your choice sides.
